Crispy-Fried Kettle Chip Wings

Ingredients
2 lbs Brookshire’s Flaps and Drumettes
1/2 tsp salt
1/2 tsp black pepper
6 cups Brookshire’s Kettle Chips
1 Tbs fresh parsley
1 1/2 cups mayonnaise
1/2 cup milk
2 eggs
1 1/2 cups flour
canola oil, for frying
Directions
  1. Spread wings on large baking sheet. Sprinkle with salt and pepper. Place chips in a large zip-top bag, and crush into very small pieces. Pour into a wide shallow bowl. Add parsley. In another bowl, whisk together the mayonnaise, milk and eggs. Place flour in a third bowl. Dip a wing in the flour first and then the mayo mixture. Dip wing in potato chips last. Place wing back on baking sheet. Repeat breading process with all wings. 
  2. Preheat oven to 300° F. In a wide deep skillet, add 3 inches of canola oil. Heat to 350° F. Add wings, 6 at a time. Fry until golden and crispy, about 6 minutes. Remove chicken to a rack placed over a baking sheet. Continue frying with remaining wings. After all wings are fried, place baking sheet in oven. Cook for 10 minutes or until wings are thoroughly cooked.
  3. Note: 1 cup of whole chips equals 1/3 cup of crushed chips. For a spicy version, use jalapeño kettle chips.
